quinoa salad

my.favourite.salad.is.quinoa.salad.

this is what I put in it:

- quinoa, cooked

- veggies, lots of them (peppers, onions, celery, baby tomatoes, cucumbers)

- cilantro, black pepper and mrs. dash

- olive oil and balsamic vinegar

Make sure the quinoa is cold. Add veggies and spices. Dress and mix it

this is one of the easiest things I make on Sundays to put in containers for the rest of the week or to have in a big bowl to grab on the go.

Sometimes I skip the balsamic and olive oil and go with fresh squeezed lemon/lime on top. Keeps it light and refreshing!
